Welcome to “El Albero”

The Albero is located in a dream city like Toledo. It is a restaurant with over 30 years of experience, which has handed over control to the Chef Ismael Suleiman in recent months . Chef Ismael with an experience of more than 17 years as a chef, studied at the catering college in Madrid and was trained in world-renowned kitchens.

The Albero, with a genuine bullfighting style and a calm and family atmosphere, will become the perfect complement in a special day since It instils the best of the gastronomic and culture of the local area. Our Chef aims to blend the technique acquired over the years in different gastronomic restaurants into the traditional cuisine.

El Albero blends innovation and latest culinary techniques with the traditional Mediterranean cuisine in the purest La Mancha style. In addition, we use only the best raw materials.

Fried artichoke, garlic and oil dressing, acorn-fed Iberian ham and bread

Seasonal product, fried fresh artichoke served with garlic and oil dressing, acorn-fed Iberian ham and bread

Yoghurt foam/mousse with wild berries

Yoghurt foam served with fresh wild berries, chocolate pop-rock, mint and lime zest

Stewed oxtail in red wine

It is a distinctive dish in our restaurant, cooked for 4 hours over low heat with local red wine

Red tuna tartar

Made with “almadraba” red tuna, marinated and served with raisings bread and walnuts

Brioche French toast with cinnamon and orange ice cream

Brioche French toast in citrus and vanilla infusion. Served with cinnamon and orange ice cream

Toledo stewed Partridge

Traditional Toledo style dish, made with wild partridge and served with mashed parsnips

“Small and very cozy restaurant. It was the first time I went and will certainly come back. Faultlessly served food. Exquisite and superb starters, main courses and desserts. The care and attention received by both room and kitchen staff was excellent, very close and professional. Price according to the quality of the products and the preparation of the dishes. “Last night we were dining at the Albero. It is a well-known restaurant in Toledo. Chef Ismael Suleiman took control over the restaurant last April. Spectacular new flavours. The fluffy rice with oaxtail was delicious, sweetbreads with poultry eggs were perfect and I could not stop dipping my bread into the fish in mussels sauce with a touch of saffron main course. The dessert, a molten chocolate cake,was the icing on the cake . I have never tried a molten chocolate cake like this one.
